- Why Russian tourists are so fond of shrimps? Pad thai, kao-pad and tom yam, they would always order it with shrimps - Kai asks me - a part-owner and chef of the eponymous restaurant "KAI" located in Maenam.

- It is because shrimps are rather expensive in Russia.  More expensive than pork or chicken. So while being here in Thailand, everyone wants to gorge on shrimps. Especially since here they are fresh and in Russia are usually frozen.

Upon arrival in Thailand it suddenly turned out that we know very little about what kinds of shrimps there are and how to cook them properly. And also how to clean them properly before cooking.

So the first step: buying shrimps.

It is better to buy shrimps on the market. The vast majority of types of local shrimp are grown in specialized shrimp farms. Sea shrimp are rare, and the sellers do not recommend them. Usually those are the largest of shrimp on the counter, but it is better to check with the seller.

Of non-marine shrimp and it may seem strange but those that are smaller usually taste better. By the way, the same rule applies to the squid - the smaller, the tastier.

The freshness of the shrimp is also very important. Because if they have been kept stale for awhile they are not gonna be tasty anymore and one might even get food poisoning.

How to pick the fresh shrimp? I mean the fresh, never been frozen shrimps.

1. Color. Fresh shrimp should be of saturated gray-green color, wet and shiny, elastic, transparent with a tight-fitting shell. Limp, milky, dry - means they are not that fresh anymore.
A shrimp rots from the head. Therefore, pay special attention to the color. If the "head" is noticeably darker than the body and it starts to blacken - it means that the shrimp has already began to decompose.
2 . Wholeness. A fresh shrimps must have all the parts of the body. " Legs ", " mustache " , "head" - it all falls of from a not fresh shrimp, when it is turned over in a pile of other shrimps.
3 . Smell. Fresh shrimp (as well as a fresh fish ) has almost no smell . Strong " fishy" smell is a sign that the shrimp has been caught quite awhile ago.

The second step: after you bought it, you can now go into any local restaurant and ask them to cook it for you. Or you can do it all by yourself.

Note: Shrimps are better be cooked immediately, without freezing it and storing for a long day in the freezer! Then lets start cleaning it.

However, some people prefer to cook shrimps right in the shell to keep the juiciness of the meat. In the end it would look like this:

A little later some good people enlightened us that we could have gotten a food poisoning by eating shrimp with its (sorry) guts, which is found in the "spine" of a shelled prawn. Despite the apparent insignificance of this part of the body, some particularly unlucky of us got food poisoning after eating a few unpeeled shrimps.

So I am sharing with you guys detailed instructions on the peeling process:

First, be careful not to cut yourself (these parts are very sharp!)

Take a shrimp and with a light twisting motion remove its head:

Next, peel the shrimp off the shell:

You can leave its tail - for it is very convenient to hold it when the shrimp is already cooked.

Now the most important thing - cutting the intestines out:

Step Three: Cooking.

You can just fry shrimps on the grill and eat with different sauces. I will give here just one - our favorite family recipe.

Take a couple of tablespoons of vegetable oil and peeled shrimps (not much, just to cover the bottom of the pan in a thin layer) Fry them until red on fairly high heat, adding roughly in the middle of the process a spoonful or two of oyster sauce.

…and a couple of cloves of grated or finely chopped garlic. At the end add sesame oil and slightly roasted sesame seeds,

and ... voila! - A delicious dish is ready :)
